Homemade Taquitos and Guacamole

Homemade baked Taquitos with homemade Guacamole is the best! The baked Taquitos are crunchy but chewy with the tasty beef, black bean, onion, jalapeno pepper and garlic filling. This has to be paired with homemade Guacamole which is always better then store bought. For this meal you want to start off with making the Guacamole as it needs to sit for an hour to meld the flavors.

Ingredients – Guacamole:

  • 2 or 3 ripe avocados that have been halved and seeded
  • lime juice from a fresh lime – yes I did say fresh
  • 1/2 of a yellow onion – chopped
  • 1/4 of a tomato – seeded and chopped
  • 1 jalapeno pepper – seeded and diced
  • 1 minced garlic clove
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon cayenne

Build it and they will come!

  1. In a medium sized bowl place the scoped out pulp of the ripe goodness of the avocados.
  2. Add the lime juice and coat well.
  3. Add the salt, cumin and cayenne.
  4. Now you can either use a potato masher or a fork to mash the avocados. Each tool has a different end result. For this time around I used a potato masher which will give a finer result. A fork gives a chunkier result which I also enjoy.
  5. Add the Onion, Tomato, jalapeno pepper and garlic to the bowl and fold in with a spoon. Be sure to fold well here.
  6. Flatten the Guacamole  with your spoon then top with plastic wrap pushing the wrap to meet the top of the Guacamole to ensure there is no air pockets.
  7. Let the flavors meld for one hour sitting on the counter top
  8. Eat! No sneaking before the hours up!

While you are waiting the hour for the guacamole to finish you might as well build your Homemade baked Taquitos.

Ingredients – Taquitos:

  • 1/2 of a yellow onion – chopped
  • 1 jalapeno pepper – seeded and diced
  • 1 minced garlic clove
  • 1 can of black bean – drained
  • 1 pound of 80% ground beef
  • kosher salt to taste – I used just a dash
  • Corn and flour tortillas – how many is up to how many you want to build
  • vegetable oil – amount varies just get out the entire bottle

I understand the Taquitos are traditionally fried but I wanted to bake them for a healthier version.

Preparing for the build

  1. In a cast iron skillet brown the onion over medium high heat with a few table spoons of vegetable oil
  2. Add the jalapeno to the skillet and soften for only a minute or two
  3. Get that ground beef in the skillet right on top of the onion and jalapeno then cook until brown and crumbly. Of course you need to use a spoon to break up the meat.
  4. Add the garlic, black beans and salt to the party mixing well
  5. Let simmer for about 5 minutes

Lets get rolling!

Now it’s time to build the Taquitos which can be time consuming but rewarding. Also corn tortillas are traditional but I ran out of corn tortilla half way through the roll plus I wanted to see if the flour tortilla would work well. My family actually preferred the flour version while I preferred the corn version.

  1. Pre-heat the oven to 350 F
  2. Cover a large baking sheet with parchment paper
  3. On a well oiled medium high heated pan add one at time a tortilla. Heat and oil both sides for about 10 or less seconds. Remove from pan and place on your cutting board.
  4. Add a  spoonful of meat mixture to the center of the tortilla. Wait for a bit for things to cool down. These things are hot!
  5. Once cool enough to roll then well roll the tortilla and meat blend as tight as you can without ripping the tortilla. Then transfer to the baking sheet.
  6. Pop these into the oven and let cook for at least 20 minutes. You want these crispy on the outside.
  7. Add the Taquitos to your plate sprinkle with cheese
  8. Now add your homemade guacamole, sour cream and salsa to your plate for dipping.
